Aubri's Oatmeal Cookies

Aubri has a severe egg allergy so we are always on the lookout for a good eggless recipe. My Mamaw found this one, she tried it, and, then, passed this wonderful recipe along to us.
And, let me tell you...
They. Are. Good.
These cookies are now a staple in our house.

Aubri's Oatmeal Cookies:

ingredients:
2 cups rolled oats
1 cup packed brown sugar
1/2 cup sugar
1 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
1/2 cup butter, melted and cooled
1 teaspoon vanilla extract

Directions:
In a mixing bowl, combine oats, sugars, flour and salt. Combine baking soda and water; stir into oat mixture along with butter and vanilla. Roll in to walnut-sized balls. Place on cookie sheets with nonstick cooking spray (I use parchment paper, so I don't spray my pan.). Bake at 350 degrees for 10 minutes or until golden brown. Remove from the oven; cool for 2 minutes before moving to wire rack. Yield: approx. 3 dozen


Wes likes these cookies the best when I add chocolate chips to the mix. My Mamaw has also made them with peanut butter.

A Berry Good Pie

I think this recipe originated with my sister, Ashley, but has been adopted by many.
This pie is so easy my dad can make it and so tasty that we make it 2 pies at a time! It is also FAT FREE!

Ingredients:
1 reduced fat graham cracker crust
2 cups frozen berry medley
1 can fat free sweetened condensed milk
2 T lemon juice
1 tub of fat free cool whip

In a blender, blend the frozen berries. Then, blend in the condensed milk and lemon juice. Pour mixture in the graham cracker crust. Freeze for about one hour. Top with cool whip. Keep frozen.

Hands Down Beller Family Favorite Cookies

This recipe was submitted by: Aunt Barbara

1 c. brown sugar
1 large egg
1 t. vanilla
1 t. baking soda
1 c. peanut butter
1 c. milk chocolate chips

Preheat oven to 350 degrees. Combine 1st 5 ingredients, and then stir in chocolate chips. Drop by rounded tablespoons onto a greased cookie sheet or parchment paper-lined cookie sheet. Bake for 10 minutes or until puffed and golden.

Chocolate Chip Pudding Cookies

When I worked for the Seminary First Lady, one of my job responsibilities was to make cookies that would always be available for any visitor that stopped by her house. People were always in and out of the house so we went through LOTS of cookies. The cookie recipe that I used was from my Mamaw Carroll so you know it has to be good! Here it is!

Ingredients:
2 eggs
2 1/2 cups flour
1/8 t. salt
1 t. baking soda
1 cup butter (softened)
3/4 cup brown sugar
1 (4oz.) pkg of instant vanilla pudding
1 tsp. vanilla
chocolate chips
chopped nuts (optional...I never put these in!!)

Instructions:
Mix flour, salt, baking soda-set aside. Combine butter, sugar, pudding mix and vanilla. Beat until smooth and creamy. Stir in beaten eggs. Gradually add flour mixture then stir in chips and nuts. Roll into small balls and place on ungreased cookie sheet. Bake 350 for 8-10 minutes. Keep a watch on them - every oven is different!!
Makes about 3 dozen cookies.
*If you double this recipe the cookies will still taste good but they do not taste the same or look as pretty.
